Belleville Chamber of Commerce Vice-President, Sandi Ramsay, brought the scissors toKK’s Sunshine Diner and officially “cut the ribbon” with Mayor Neil Ellis, Councillors Carr, Seu & Thompson, MP Chris Malette and MPP Allsopp’s representative, Danielle Letersky at its new location at 652A Dundas Street East in Belleville. While the diner has been open since November, 2025, the ribbon cutting marked an opportunity to get the word out they are back!
Belleville native Saun “Sunshine” Collingridge, proudly assisted by Kelley, founded KK’s Sunshine Diner with a focus on affordability, comfort, and quality. Kelley is the mother of one of Saun’s childhood friends, and over the years their connection has grown into a strong partnership built on trust, respect, and shared values. Together, they believe food should be homemade, comforting, and affordable—something families can enjoy without stress – and the menu features classic home-style meals prepared from scratch using only quality ingredients.
“Our passion is offering families a reasonably priced place to eat that truly feels like home,” said Collingridge.
“From fresh-cut home fries and French fries to house-roasted turkey, chicken, beef, and homemade spaghetti sauce and chili — this is the food we believe in. Everything we serve is food we would proudly put on our own family table.”
For Collingridge and Kelley, the opening is a powerful return to business following the closure of the original KK’s on North Front Street during the pandemic. They noted the Dundas Street East location is a strong fit and just happens to be right next to their favourite butcher, Gilmours by the Bay Butcher Shop, where they source their fresh, never-frozen, ground beef, charbroiled on site. The menu includes comfort-food favourites such as meatloaf, sheperd’s pie, clubhouse sandwiches made with house-roasted turkey and off-the-bone ham, and adding their bold, house-made pulled pork makes any item an instant favourite.
Opening a restaurant comes with no shortage of hurdles, and KK’s Sunshine Diner’s journey was no exception but they know they’re on track when they hear from satisfied customers every day and the overwhelming support they’ve received from community. And community is at the heart of everything they do. From supporting the unhoused and vulnerable, to helping children whenever possible, their mission goes far beyond the walls of the diner.
Collingridge and Kelley also expressed appreciation for the many individuals and organizations who supported them along the way, including Jack and the team at Gilmour’s by the Bay Butcher Shop; the Small Business Centre; Amanda at City Hall; Bayleaf Authentic Indian Cuisine; Belleville Fire; Hastings Prince Edward Public Health Unit; Lines Electric; 5 Star Fire Protection; and several local businesses including Brappie’s Services, Total Take Out Delivery, and One Stop Bins.
KK’s Sunshine Diner is open Sunday to Tuesday from 8 a.m. to 2 p.m., and Wednesday to Saturday from 8 a.m. to 7 p.m.
